Avocados, anyone?

Before I start talking about food – Brian and I have a new nephew and niece!  Miles Manning and Quinn Eliza, beautiful twins born on Sep. 12th.  Seriously, we have the cutest nieces and nephews ever.  We’re also the proud “Uncle Home Cheese and Aunt Katie” to sweet little baby Arman, born on Sep. 11th.  Congratulations Kim and Trevor, and to our dear friends Tara and Adrian!

So it didn’t take long for us to realize that if you are an avocado lover, Santiago is the place for you.  There is an abundance of this tasty green treat – in fact I’ve seen them priced so low that they’re practically giving them away.  Seriously, it’s guacamole heaven here.

Since arriving to Chile I’ve been collecting avocado recipes (mostly from pinterest).  The plan is to try them all while we’re here – in avocado land.  I thought I’d share a few of the recipes I’m most excited to try.  If you try one let me know how it turns out!  And if you have an avocado recipe you love, please share!
